Beetroot powder is a fantastic ingredient to have in your paleo cupboard. Containing 17g of fibre per 100g it’s a great way to add a much-needed fibre boost to your daily diet.

 

Why do we need fibre?

Fibre feeds the beneficial gut bacteria that reside in our large intestines. Withiut adequate fibre these bacteria are starved, and more pathogenic strains are able to thrive, leading to gut dysbiosis and various health problems. Try this recipe for Beetroot Hummus from Of The Earth Superfoods

 

This vibrant coloured dip looks appetizing on any sharing table. We’ve opted for edamame beans instead of regular chickpeas, as they contains more protein and support muscles and the cardiovascular system. Adding our organic beetroot powder, rich in iron & nitrates, this dip is the best post workout snack. Dip in some raw carrot batons, celery sticks or even crunchy apple slices.

Ingredients

  • 200g edamame beans
  • 1 teaspoon beetroot powder
  • juice of half a lemon
  • ½ teaspoon salt
  • small bunch of fresh coriander
  • ½ cup water
  • 2 tablespoons olive oil

 

Method

Put all ingredients except the water into a blender and whilst the machine is working, start to add the water gradually. When you reach your desired consistency (we like ours to be extra smooth) adjust the taste with salt or spices if necessary. Transfer it to a serving bowl and enjoy with fresh crudités or crackers.
