Here at Paleo Britain headquarters we LOVE coconuts! When you give up dairy and wheat, coconut milk and coconut flour become your new best friends. A few weeks ago I discovered a fantastic new product that is now a firm favourite of mine – creamy coconut yogurt made by The Coconut Collaborative. You can check out their website here: www.coconutco.co.uk. The yogurt is dairy-free, creamy and delicious.

 

There are 4 different varieties available:

 

*Natural – Silky-smooth coconut yoghurt, pure and simple

*Berries & Seeds – Silky-smooth coconut yoghurt with a little bag of seeds and berries to sprinkle on top. This one was my favourite.

*Raspberry – Coconut yoghurt with tasty, tangy raspberry compote (contains corn starch)

*Mango & Passion Fruit – Juicy alphonso mango and passion fruit compote and delicious coconut yoghurt (contains corn starch)

 

Here’s how I enjoyed my coconut yogurt – for breakfast with fresh blueberries and the packet of seeds and berries it comes with sprinkled on top – yum! I’ve also eaten the yogurt a lot with our Paleo Granola sprinkled on top for breakfast or as a snack. My kids are currently enjoying the natural flavour blended with bananas and cashew butter to make a tasty pudding.

Ingredients: All 4 varieties are delicious and suitable for anyone following a sugar-free, gluten-free or dairy-free diet. The natural ones just contain coconut milk, natural thickeners, water and selected dairy-free cultures. (Potato starch and tara gum are the thickeners. Potatoes are allowed on a paleo diet unless you have problems with nightshades, and potato starch is recommended by many sites as a source of resistant starch  – see below for more information. The small amount contained in the yogurts would not provide much resistant starch but also isn’t an issue for most people.)
