Tiger Nuts – a tiny root vegetable overflowing with goodness! Guest Post from the Tiger Nut Company

We are really passionate about tiger nuts and their health benefits, and although people are starting to become more aware of them, as they are relatively unknown we find that people are not always sure how to cook or eat them.

 

They are probably best known for making tiger nut milk or horchata, a delicious traditional drink in Spain, which is much easier to make than you might think;

However they are so much more versatile than you might imagine! They are delicious eaten raw with skins on, peeled or milled as a flour, or can be used in cooking and baking both sweet and savoury. In recipes you can often substitute almond flour with tiger nut flour as it has a similar consistency, and because it is naturally sweet it can be used without sugar in many recipes. One of my favourite recipes is Tiger Nut Hob Nobs. I usually make double the amount, cook half as biscuits and use the remainder to make raw cookie dough balls which are so delicious!
