This recipe is from Wedo Green Banana Flour and is a source of resistant starch which feeds beneficial gut bacteria. Drizzle the finished pancakes with fructo-oligosaccharide yacon syrup for extra prebiotic fibre and serve with blueberries and probiotic-rich homemade yogurt (dairy or coconut).
Wedo Green Banana Flour is a unique product packed full of potassium, fibre, minerals and resistant starch. It has all the nutrition of a banana but without the banana flavour.
Wedo Green Banana Flour is a great source of resistant starch, which is a prebiotic that feeds the good bacteria in the gut, aiding digestion and boosting the immune system without spiking blood sugar levels. About 50% of the resistant starch is preserved when you cook with the flour compared to eating it raw. You can also add it to smoothies to gain the full resistant starch benefits.
The only ingredient in green banana flour is banana, and the process is simply that the green bananas are peeled, dried, milled and then packaged. This flour is gluten-free and you need about 25% less than wheat flour in recipes.
