  • Method :
    1. Blitz the cashews, coconut and dates together to form a grain like texture.
    2. Add the honey and blitz again until all the ingredients are combined.
    3. Line a small square/rectangular dish or deep sided baking tray with greaseproof paper.
    4. Add the mixture and spread evenly aiming for a thickness of 1 cm.
    5. You will need to gently press the mixture into place so it is all combined.
    6. Place in the fridge for 2 hours or until the mixture has a firmer texture.
    7. Remove from the fridge and allow to stand for 5 minutes.
    8. Carefully remove the mixture from the dish using the greaseproof paper.
    9. Remove the greaseproof paper and cut the mixture evenly into 4 snack bars or squares.
    10. Keep stored in the fridge in an air tight container.
